Berrylicious – Yogurt & Mixed Berry Parfait with Walnuts

Summer means berries – Strawberries, Raspberries, Blueberries… choosing a favourite is hard. So don’t and make this delicious, healthy summer dessert that you can enjoy without the guilt and with all the benefits that come with them. The kids will love this and its a much healthier alternative to ice-cream and is perfect for those who are Gluten Free!

Did you know that berries contain high amounts antioxidants, vitamin C, calcium, magnesium and folate plus they are low in calories
Method:

  1. In individual glassed gently layer alternately spoonfuls of yoghurt and then berries until the glass is almost full
  2. Place a heaped handful of berries especially strawberries on top
  3. Serve with a handful of Walnuts and if you’re feeling naughty a square (or 2) of dark chocolate.

Enjoy as for breakfast, afternoon snack or as a healthy weeknight dessert.
